anyone who buys tinned duck in france{i normally boy 6 min}when your ready to cook it put the unopened tin in a pot of water bring it it a simmer then turn it off.
leave the tin to coolfor 5 mins then carefully open halfway and pour all the melted fat into a container for further use with your roastiesĀ etc{you will be suprised how much fat you get out of the tin doing it this way}
