Heres my take on a spanish Tortilla. ?
You will need,
1x pack of round tortillas
1xcarton of tomato passata/chopped
250g of cheese (chedder or whatever you like) but grateable
Fresh basil.
In a round cake tin or ramoska tin place 1xtortilla round in the bottom, may need trimming to fit add some tomato, basil & grated cheese. Do this 6 to 8 times piling them up.
Then on top of the last one sprinke some dried onion (optional) with some of the bits of tortilla you have cut into small pieces then a generous helping of the rest of the grated cheese but no more tomato..you want it crispy on top.
Now stick it in the oven at about 200 for 20-25 mins keep checking until brown on top.takes about the same time in a ramoska.
Should serve 4 people.
